Avocado Toast

 

The classic recipe can be stepped up a notch by adding an extra punch of protein with scrambled eggs. The combination of fibre, protein and healthy fats is filling, satisfying and is a nutritious start to your day.
Avocados are a great source of potassium, fibre, heart-healthy monounsaturated fat and folate, while eggs provide protein and micronutrients like choline, B vitamins and vitamin D

Ingredients

  • 1 Slice wholegrain bread

  • ½ Small avocado

  • 1 Large organic egg

  • 1 Tbsp of milk

  • Olive oil

  • Freshly cracked black pepper

  • Sea salt

Directions

Cut the bread into a heart shape using a sharp knife.

Toast the bread in the toaster or in a small pan over a medium heat.

Smash the avocado, black pepper and salt with a fork. Spread over the toast.

Whisk together the egg, milk and a pinch of salt.

Place a small dribble of olive oil in a small non-stick pan and place over a low heat.

Pour the egg into the pan, and cook, stirring with a spatula until set.

Spread the avocado onto the toast, layer the scrambled egg with a twist of black pepper.
