Black Olive Hummus

 

A creamy, rich flavoured hummus made with chickpeas, pitted black olives, tahini and extra virgin olive oil

 

Ingredients

  • 2 tins of chickpeas (drained)

  • 240g jar of pitted black olives 

  • ⅓ cup of tahini

  • ¼ cup extra virgin olive oil

  • ¼ cup lemon juice or 2 fresh lemons

  • ¼ cup of white part of spring onions

  • 1 tsp salt

  • ¼ tsp Fresh ground pepper (or to taste)

Directions

Place the drained chickpeas into a blender.  Add half the jar of black olives including half of the brine.  Place all the remaining ingredients into the blender or food processor.  Blend on high speed until smooth which should take 2 minutes.
